Position Overview: The Artisan of the Morning
The title “Commis de Rang” is a classic term in the hospitality industry, denoting a junior member of the food and beverage service team. As a Commis de Rang for our breakfast service, you are an artisan of the morning, a curator of the first—and often most important—culinary experience of our guests’ day. Your role is the foundation upon which the legendary Ritz-Carlton service is built. 1. Guest-Centric Service & Interaction:
- Service-Oriented Support: You will provide warm, attentive, and discreet service to our guests during breakfast. This involves greeting them, escorting them to their tables, and ensuring they feel welcomed and valued from the moment they enter POTS restaurant.
- Expert Advisory: You will be knowledgeable about our breakfast offerings, from the continental spread to à la carte options, and be able to confidently answer guest questions and make recommendations, enhancing their dining experience.
- Creating Special Moments: You will go beyond the transactional. Remembering a guest’s preference for a specific table or type of tea is what transforms service into exceptional, personalized care. You will have the autonomy to create these small, yet significant, moments that guests remember long after they check out.
2. Operational Excellence & Mise en Place:
- Preparation of Mise en Place: “Mise en place” (literally “everything in its place”) is the sacred preparation ritual of any great culinary team. You will be responsible for preparing your station—polishing cutlery and glassware, stocking condiments, folding napkins, and ensuring every element is perfect before the first guest arrives.
- Buffet Management: You will be entrusted with the setup, presentation, and continual replenishment of the breakfast buffet. This is an art form, requiring an eye for aesthetics and a relentless commitment to freshness and abundance. Clearing tables promptly and resetting them for the next guests with efficiency and grace is also a key part of your role.
- Hygiene & Safety Compliance: You will adhere to the highest standards of hygiene and safety as per HACCP regulations, ensuring a clean and safe environment for both guests and colleagues.
